Why do some wines taste boring while others make your mouth sit up and take notice? Why do some wines leave you with a dry puckered mouth while others feel velvety on the tongue? Often it's a matter of balance between the major components of wine: alcohol, sugar, tannin, and acid. In this class, we'll look at each component on its own, and then do some hands-on blending to experience how they interact with each other. |

Oregon's grape growing season can vary dramatically from year to year, and it can make a big difference in the wines. Some years the wines are lean and elegant, while in other years they are bigger, fruiter, and more muscular. We'll explore vintage variations expressed by Pinot Noir through a vertical tasting of several recent vintages. We'll also get a first hand look at how wine changes as it ages. |
